    Default Cucumber Salad with Rice Vinegar Dressing

    Cucumber Salad with Rice Vinegar Dressing

    3 cups thinly sliced seeded peeled cucumber (about 2 medium)
    3 tablespoons rice vinegar
    1 teaspoon sugar
    2 teaspoons dark sesame oil
    1/2 teaspoon salt
    2 tablespoons chopped green onions
    1 1/2 tablespoons chopped unsalted, dry-roasted peanuts

    Combine first 5 ingredients in a medium bowl; toss to coat cucumber. Sprinkle with onions and peanuts before serving.

    Yield: 6 servings (serving size: 1/2 cup salad, 1 teaspoon green onions, and 3/4 teaspoon peanuts)

    CALORIES 42 FAT 2.8g FIBER 0.7g

    I am going to pick up the onions & sesame oil tomorrow to try this. I'm on the lookout for new recipes. In a bit of a rut here :yes:

    I made this tonight but didn't use the green onions (how is it that my grocery store is always out when I want them?), and I used toasted sesame oil vs. dark because that's what Dave bought.

    They were still a hit

    it is good, too, with a little wakame (seaweed) in it
