Ranch Pasta Salad

1/3 c carrots, shredded
1/4 c red onion, chopped
1/3 c scallions, chopped
1 c cucumbers, seeded & chopped
1 c tomatoes, chopped
1/4 c radish, chopped
2 c Barilla Plus Elbows, uncooked
2/3 c South Beach Ranch Dressing


Cook elbows according to package directions. Drain well. Mix all ingredients together, salt & pepper to taste, and allow to sit in refrigerator for at least 4 hours. This makes 7 one cup servings.
