    Default Beefy Cornbread


    10 oz lean ground beef
    1 tsp chili powder
    1/4 tsp ground cumin
    1/2 c frozen corn, thawed
    1/4 c salsa
    3/4 c cornmeal
    3/4 c all purpose flour
    2 Tbsp sugar
    2 tsp baking powder
    1/2 tsp salt
    2 beaten eggs
    3/4 c skim milk
    2 Tbsp cooking oil
    1/2 c shredded reduced fat cheddar cheese
    1/3 c salsa, heated
    Jalapeno slices (optional)
    Fresh cilantro (optional)

    In a large skillet cook ground beef, chili powder and cumin until meat is brown. Drain off fat. Stir in corn and 1/4 cup salsa into meat.

    Meanwhile, in a medium bowl, stir together the cornmeal, flour, sugar, baking powder and 1/2 tsp salt. In a small bowl, combine the eggs, milk and oil; add to the flour mixture, stirring just until moistened.

    Spray a 2-qt rectangular baking dish with nonstick cooking spray. Spread half the cornmeal mixture in the dish. Spoon half of the meat mixure over batter and sprinkle half the cheese over meat. Spoon remaining cornmeal mixture over cheese, spread to cover the meat layer. Bake, uncovered, in a 375 degree oven about 20 minutes or until wooden toothpick inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand 5 minutes. Serve with the 1/3 cup of heated salsa. If desired garnish with fresh cilantro and jalapeno pepper slices.

    Makes 6 servings
    NI: 335 calories, 14 g fat, 1 g fiber

    The calories and fat can be reduced if you substitute egg beaters and splenda.

    Thanks...I bet my family would love this.

    I think I'll try Egg Beaters instead of eggs and reduce the sugar to make it even healthier
