    Impossible Taco Pie 6 servings

    1 1/4 lb Extra lean ground beef
    3/4 cup onion
    1 pkg Taco Seasoning Mix
    1 1/4 cup fat-free skim milk
    1/4 cup Egg Beaters
    3/4 cup Bisquick Reduced-Fat Baking Mix
    1 cup fat free Shredded Cheddar Cheese

    Heat oven to 400. Spray deep dish pie plate with Pam. Cook ground beef
    and onion over med heat, stirring, until beef is brown. Drain. Stir
    in seasoning mix. Spread in pie plate.

    Stir milk, egg beaters and baking mix with fork until blended. Pour into pie plate. Bake 25 min. Sprinkle with cheese.

    Bake 8 to 10 min longer or until knife inserted in center comes out clean. Cool 5 min.

    I love the "impossible" series of recipes. Does anyone else have one to add to this thread? It would be great to have them in one place.

    Impossible Pies are the answer to a Q&E meal around our home. I mill my own flour and make a multi-grain version of Bisquick (includes spelt flour, whole wheat flour, oatmeal, corn meal, and flaxmeal) to help improve the nutritional profile and increase fiber.

    I have the books, Bisquick Impossibly Easy Pies, as well as Bisquick Cookbook and Bisquick II. Check your local library for copies. I also have 34 Bisquick booklets. The earliest one is from 1933, which has recipes in it from famous chefs, Hollywood stars, and others....

    Impossibly Easy Taco Pie, similar to the recipe for Impossible Taco Pie is a favorite, however, I never use as much Taco Seasoning in it as the recipe calls for. I generally make 1/2 or 1/3 the recipes - enough to serve 2 of us. I have a variety of small pie dishes, tart pans, pasta dishes, and small casserole dishes that I can make smaller amounts in.

    I've made Impossible Pumpkin Pie since the recipe first came out and it's a family favorite (the recipe is found at the link above). Great for those of us who hate to make pies....

    One we like that's not in that list...

    Prep: 12-minutes, Bake: 20-minutes

    2 c. Original Bisquick
    1/4 c. grated Parmesan cheese
    1/2 c. water
    1/2 t. Italian seasoning
    1/2 package (3-1/4-oz. size) sliced pepperoni, cut in half
    1/2 c. shreded mozzarella cheese (2 oz.)
    Sliced ripe olives, if desired
    Pizza sauce, heated, if desired

    1. Heat oven to 400°F. Generously grease bottom and sides of square pan, 9x9x2-inches, with shortening.

    2. Stir Bisquick, Parmesan cheese, water, Italian seasoning and pepperoni until moistened; spread on bottom of pan. Sprinkle with mozzarella cheese. Top with olives.

    3. Bake uncovered 18-20 minutes or until edges are light golden and cheese is melted; cool slightly. Serve warm. Serve with pizza sauce. Yields 6 servings.
