    Unstuffed Pepper Skillet

    Serves - 6

    1 pound ground beef, 95% lean
    2 cups water
    14 1/2 ounces diced canned tomatoes, drained
    2 large bell peppers (green, red or yellow), diced
    1 medium onion, diced
    1 teaspoon salt
    1/2 teaspoon Italian seasoning
    1/2 teaspoon black pepper
    1/8 teaspoon cayenne pepper
    1 1/2 cups instant rice, uncooked

    In a large skillet, brown beef; drain. Add onions and bell peppers; cook until onions and peppers start to soften. Add tomatoes, water and seasonings; bring to a boil. Stir in rice; reduce heat; simmer, covered, for 2 minutes. Remove from heat. Let stand for 5 minutes. Uncover and stir.

    Nutrition Information per serving:
    316 Calories; 2g Fat (9.8% calories from fat); 11g Protein; 28g Carbohydrate; 3g Dietary Fiber; 21mg Cholesterol; 617mg Sodium. Exchanges: 1 1/2 Grain(Starch); 1/2 Vegetable; 0 Fat.

    Sounds pretty good! I just might try it when I need quick, easy clean-up meal. I like the idea of all of it in one skillet too!
