    Default Lower Calorie Cake Recipe...

    A lady I was talking to yesterday said to use one box of cake mix with one can of diet soda, mix it and bake. No oil (which I always substitute apple sauce for oil) or eggs. I guess if you make vanilla cake you use diet 7up, orange cake you use diet orange. Anyone do this? Is it good?

    HOT DIGGIITY DOG! a low cal cake! I'm all for it. I can try with my next cake bake. (which won't be for a while... dd2 had a monstrosity of a cake made for her daughters 1st bday party. Lots and lots of leftovers.

    So if I can find the thread - i will report back in.

    Making cake with applesauce vs. oil is a better deal.

    I can't recall for sure how much oil goes into a cake mix since it's been a few years since I've used one, but IIRC, it's a third cup. Unsweetened applesauce is used 1:1 instead of the oil. Unsweetened applesauce has about 35 calories in 1/3 cup. I also can't recall how many eggs are used in a mix, but one egg is about 70 calories. So the two items together add about 105 calories to the entire cake. Divided by twelve servings, using an egg and applesauce adds less then nine calories per piece. Or putting it the other way, not adding those two ingredients saves you only less than nine calories. If you cut the cake into smaller pieces, the added calories from those two ingredients becomes even less. If I'm wrong about the amounts of egg and applesauce, you'll have to redo the math, but I don't think there's really much of a calorie savings.

    We've found that baking cakes in a larger pan so it's thinner works better for portion control than baking in a 9x13 pan. Each piece looks like more so your brain thinks it's getting more than if you have a higher cake cut into a smaller piece.

    I've made dump cakes while camping using canned pie filling or fruit, dry cake mix, and pop poured over the top. I've never been very impressed with the results but there's never any left, so other people must have lower standards than I do. I haven't used diet pop, but I do know some artificial sweeteners don't work well if they're heated.

    All that said, it wouldn't cost much to try it.

    Thanks for the idea heyaim. I have never tried this.........mainly because I don't have diet soda on hand.

    There sure is lots of info about doing it online though.................it must work.........though on this thread, one of the reviews said that it needed one egg. Some of the posts have mixed reviews. The combos sound like something fun to try!

    I won't be trying it for a while. Tuesday ends our birthday streak (5 within 1 month). I'm caked out! But, it may be something I trying in a month or so. Might make the icing out of sugar free pudding and cool whip. That would be a very low cal sweet treat!
