    Default Oatmeal Pancakes

    I used a recipe similar to this for breakfast yesterday. It wasn't bad, but I didn't really like it all that much the way it was, so I adapted it and came up with these. I like these a LOT better.

    Oatmeal Protein Pancakes- Serves 1

    1/4 cup oats
    2 egg whites
    grated apple (I used only a tablespoon or two, and sliced the rest of the apple for later.)
    cinnamon
    vanilla

    Mix about half of the oatmeal in a blender until it is powdery. Blend together with egg whites, cinnamon, vanilla, and grated apple (as much of each c, v, and a as you think you will like). Mix well, then add remaining (whole) oats.

    Cook as you would regular pancakes. I like little pancakes, so I made about 8 silver dollar pancakes. You could also make 2 larger pancakes or anything in between. Serve with low calorie pancake syrup, or better yet, a little all-fruit spread.

    Without the pancake syrup or jam, these have about 140 calories (w/ 2 T apple, 1/3 t cinnamon, and 1/2 T vanilla.)

    They have about 11% dv fiber, 15% dv protein, 29% dv riboflavin, and 22% dv selenium.


    I don't know if I have explained them well or made them sound appealing, but they are quite good. The original recipe was basically egg whites with splenda and oats in them, and I didn't find them too sppealing (plus I don't have Splenda.) I tried them because they were so highly recommended by so many on the site for the computer program I use to track my diet/weight. They are much better made this way, and best of all, they are VERY filling!!!

    I just saw this recipe somewhere!! I can't believe you have it too!
    I'm thinking- it something with weight loss. body building.
    Sounds deliscious and I LOVE oatmeal!

    How funny!

    The original recipe had only egg whites, uncooked oats, and splenda. You just sorta' mixed them up and thre 'e, in a pan. I much prefer them this way- much more like actualy pancakes, but with a nicer texture (IMO.)
