    Zero Point Soup

    Category: Vegetables

    Ingredients and Directions

    1 each vegetables, frozen, large bag, italian blend

    28 oz tomatoes, can, diced, undrained

    1/2 each cabbage, head, chopped

    1 each broth, chicken, can

    2 teaspoon italian seasoning

    Mix broth, tomatoes, italian seasoning and cabbage together in a large pot. Cook until cabbage is nearly tender. Stir in frozen vegetables and cook an additional 10 minutes. Note: Can add elbow macaroni if you choose. Makes 7 cups.

    This is kind of like the cabbage soup diet.
    I use:
    1/2 head chopped cabbage
    3 carrots chopped
    2 green peppers chopped
    6 green onions chopped
    6 ribs celery chopped
    8 oz. mushrooms chopped
    2 cans chopped tomatoes
    48 oz. v-8 juice
    8 cups water
    season to taste
    *optional - minced garlic - fat free broth instead of some water - could add some beans or lentils for protein.
    I have a big pot cooking right now!
    DH is trying desperately to loose some weight. We have done this many times with the soup.
    Great vegetarian soup as well.

    this sure beats those point point progesso soups at over a dollar can !
    can you believe they are over 1 dollar a can ?!?!?!

    Got a case of cans at costco for 10 dollars but I'd much rather make fresh zero point soup...
    this sounds like the weight watchers recipe in the older quick start books you get in registration.

    adding macoroni will raise the points.

    I add some cilantro to give it a kick. This is very good and a filling lunch/dinner.

    Freezes well too!!!

    I think I have all the stuff for this.
    Will make up a pot today.
    Then Doug can use it for his lunches to the rest of the week..
    The kids can eat something else.

    I have made this and made it a little spicier. I also add zuchini to it. My kids love it as well. I have to hide some for my lunch!

    How great to know that it freezes well! I have some little margarine tubs from my Mom's house, they will be perfect. Sounds healthy, too...

    Yeah, that's what I was thinking. I did pretty well
    with that soup. Maybe I will try it again.
