Fresh Cranberry Orange Relish
Recipe DescriptionAnother Cranberry RecipePreparation Steps:Wash and drain cranberriesLevel of Difficulty:
Quarter and peel Orange remove all seedsEasyTime Needed:About 15 to 20 minsIngredients:1 12oz package of fresh cranberriesServes:
1 orange2 1/2 cupsDirections:Put washed and drained cranberries in a food processor with the orange , pulse for a few seconds till coarsely chopped stop and scrape down sides of bowl.
Add 3/4 to 1 cup of sugar and adjust sweetness as desired.Stir well and refrigerate for at least 2 hours before serving.
This relish may be frozen for up to 2 months

We use 1/2 bag of cranberries, 1 orange and 1/2 cup sugar.

We love this refreshing recipe. It's a great alternative to cranberry sauce. (Recipe source: SuperFoods - by Steven Pratt, M.D., and Kathy Matthews)
I freeze it in small containers and serve it often as a side dish. I add agave nectar, instead of using sugar. Other no-calorie chemical sweeteners could also be used instead of sugar.
