    Default What would you serve with black beans and rice?

    I'm looking for ideas on what to serve with black beans and rice. I like black beans with mexican dishes, but I'm looking mostly for other ideas (give me the mexican dish ideas too, though).

    Tonight we had black beans and long grain rice, pork tenderloin (leftovers pulled from the freezer), corn, peas and homemade wheat bread. Sometimes I serve chicken instead, but this is basically what my black-bean-and-rice suppers look like. Need some more variety.

    Oh, and yes, I know we don't have to have meat with it, but we like to.

    Sounds like a good base for a taco style dinner.. tortillas, fresh veggies, salsa, sour cream

    You can use your black beans in my taco soup recipe and then put rice in the soup right before serving.

    Raw tomatoes? Canned? Stewed? If raw, do you cook them?

    How would you serve this? Mix everything together?

    Drain the beans and then mix the beans and rice. Use as filling for burritos with cheese and veggie toppings.

    This is one of those toss-together recipes I make a lot in the summer when I have fresh herbs and tomatoes. You can add all kinds of things - a good way to clean out the veggies in the refrigerator.

    Black Beans & Rice Taco Salad

    2-4-cups black beans and rice (cold) (can also be made with black beans only)

    Add:

    sliced ripe olives, fresh tomato (seeded and chopped), shredded or small cubes of Cheddar cheese, one or two chopped green onions or chopped fresh chives, chopped fresh cilantro or parsley (you can get these ingredients at the salad bar at your grocery store if you don't have them on-hand).

    Dressing:
    2 T. lime juice
    1/4-1/2 t. ground cumin (to taste)
    fresh ground pepper

    Stir into the bean/rice mixture.

    Serve on a bed of baby spinach or other greens for a whole-meal deal.

    Rice and beans equals a whole protein and is a great meat alternative, so meat, in addition to the rice and beans, is over-kill in the protein department. At most, I'd make a stir-fry with some beef/pork/chicken and lots of veggies and serve the rice/beans along side the stir-fry.

    My DH likes to eat black beans and rice instead of fries or chips so he has them with sandwiches, burgers, hot dogs...just about anything.

    I like them with Picadillo (a cuban dish)

    1 lb ground meat
    1 large onion, chopped
    2-3 garlic cloves, chopped
    1 small can tomato sauce
    1 T cumin
    Pimiento stuffed olives
    Salt and pepper to taste

    In a large skillet, brown the ground meat, onions and garlic. If meat is not too lean, pour out whatever fat you render.

    turn heat down to medium low. Add the tomato sauce and spices. While it simmers, chop up the pimiento stuffed olives and add to meat mixture, it is ok to add a little bit of the brine, if you wish.

    Black beans and rice are great with chicken. Also sweet potatoes go well with them. It really depends on if they are the main course or a side dish.

    My MIL makes the best (and easiest) black beans and ham! I love to make this in the winter.

    Simmer black beans (she uses dry beans; I use canned since it is much quicker) and diced ham on the stovetop. You can quickly heat these, or cook on low for longer.

    Meanwhile, dice onions in a bowl. Set out sour cream and shredded cheddar cheese.

    Right before serving, prepare instant rice according to directions.

    On a plate, make a bed of rice. Add the bean/ham mixture, then top with onions, sour cream, and cheese. YUM!

    If it were up to me would just have a salad w/ tomatoes, onions, oil & salt. I don't need meat every meal unlike my carniverous other half. Often I just cook ground beef w/ peas/corn & season the heck out of it...put on top of the rice & beans & voila!

    Wow! You guys are adventurous, or else I'm just boring??

    I usually just eat my black beans & rice as is.
    Sometimes I'll put a couple scoops of homemade pico de gallo on top, but that's about it.

    However I make black bean nachos & black bean soft tacos in place of any kind of meat, several times a month.
