    It snowed like crazy here in Southern Maryland, the whole east coast was hit. Today I baked 2 loaves of cuban bread, made a batch of refrigerated potato dough, and am getting ready to bake applesauce bread.

    Funny story: I was trying to mix my cuban bread when my 17 year-old son comes in the kitchen and decides to make himself a hamburger. He turns on the pan then says, "Mom can you separate these two patties? I can't get them separated." I separate them. The burger is cooking in the pan, "Mom, can you watch my burger for a minute?" Then he's outside on the four wheeler. I yell outside, of course he can't hear me so he comes in and says, "What? I was just gona be a few minutes." By this time I have lost all track of where I was because I don't bake bread very often. I put one teaspoon of yeast instead of a tablespoon. The bread didn't rise very well. But things turned out okay. It resembles a foccacia bread. I will use the one loaf at dinner tonight. Cut it in half long ways, like french bread, then put butter and some Italian seasoning on it. Aren't kids great?

    care to share the recipe? I just got (I am sooooo excited about it) a kitchenaid stand mixer. I am looking for bread recipies. TIA

    I love the cuban bread! It's a TWG recipe, if I remember correctly, and if we are using the same one! I love the fact that your son made his "OWN" hamburger while on a 4 wheeler...that's talent!

    Here is the recipe that I use:

    5-6 cups of flour
    2 TBS dry yeast
    2 TBS sugar
    1 TBS salt (I cut that to 1 tsp, or I think it is too salty)
    2 cups hot water

    DO NOT PREHEAT OVEN! Mix 4 cups of flour with yeast, salt & sugar. Add hot water (which should be warm about 110 degrees), beat 100 strokes or 3 minutes. Stir in remaining flour until dough is no longer sticky. Knead for 8 minutes. Place in greased bowl for 15 minutes and let rise. Punch down and divide into 2 pieces. Shape into round loaves (you can also shape them into french bread style loaves) and place on a baking sheet. Cut an X into the top of each one. Place in a cold oven with a cake pan full of hot water on the lowest shelf (then bread goes on the upper shelf). Heat to 400 degrees and cook for 40-50 minutes.

    I am new at this bread making adventure. Can I use the mixer for the kneading part? On a lower speed or something????

    No baking here....we gave up sugar for Lent.

    Which also means virtually NO packaged foods........

    Baking rolls from my refrigerated potato dough. And yes kids are the greatest! My life would be so boring without them.
