    Default Canned milk ideas, quick

    I have 7 cans of evaporated milk, 'best by' date in 3 days. I don't like to use milk past the date. Ideas on what I can do with them please!

    Bisquick Impossible Pumpkin Pie

    1 can (16-ounces) pumpkin
    1 can (13-ounces) evaporated milk
    2 T. margarine or butter, softened
    2 eggs
    3/4 c. sugar
    1/2 c. Bisquick baking mix
    2-1/2 t. pumpkin pie spice
    2 t. vanilla

    Heat oven to 350°F. Grease pie plate, 9x1-1/4 or 10-1-1/2-inch (I also use an 8- or 9-inch square baking pan for "square" servings). Beat all ingredients 1 minute in blender on high or 2 minutes with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 50-55 minutes; cool.

    I thinly slice potatoes, add sliced onions, a big pinch of thyme and a can of evap milk. simmer over low heat until the potatoes are tender. Makes a quick version of scalloped potatoes.

    More recipes I found hiding in a file. I taught a class with recipes that used commodities and there are some recipes using evaporated milk.

    Raisin Apple Bread Pudding
    (source: Nestle)
    Makes 8 servings.

    4 c. day old white bread cubes
    1 medium apple, chopped
    1 c. raisins
    2 eggs (or 1/2 c. egg mix + 1/2 c. water)
    1 (13-ounce) can evaporated milk
    1/2 c. apple juice
    1/4 c. sugar
    1-1/2 t. cinnamon
    caramel sauce (optional, see below)

    1. Preheat oven to 350°F. Grease 11x7-inch baking dish.

    2. Combine bread, apple, and raisins in large bowl. Set aside.

    3. Beat eggs in medium bowl. Stir in evaporated milk, apple juice, sugar, and cinnamon; mix well. Pour egg mixture over bread mixture, pressing bread into egg mixture; let stand 10-minutes until bread absorbs liquid. Pour into prepared baking dish.

    4. Bake for 40-45 minutes or until set and apples are tender. Serve with warm caramel sauce.

    Caramel Sauce
    Makes 2-1/2 cups

    2 c. sugar
    1/2 c. water
    1 (13-ounce) can evaporated milk
    1/2 c. (1 stick butter, softened, divided
    2 t. vanilla extract

    1. Combine sugar and water in medium saucepan; cook over midium-high heat, stirring occasionally, until mixture comes to a boil. Continue to boil, without stirring, 10-14 minutes, tilting pan occasionally to keep color even until mixture turns a deep caramel color. Remove from heat.

    2. Stir in evaporated milk (mixture will form up); do not scrape sides of pan. One tablespoon at a time, add 1/4 c. butter, stirring well after each addition. Stir in remaining butter and vanilla extract until smooth. Serve over bread pudding, ice cream, cake, or fruit.

    Banana Smoothie
    Makes 3 servings

    1 c. evaporated milk
    1 ripe banana
    1 t. lemon juice
    2 c. ice
    1 T. honey or sugar
    nutmeg, optional

    1. Mix evaporated milk, banana, lemon juice, and honey together in blender on high speed. Add ice gradually; process until slushy. Sprinkle with nutmeg, if desired.

    I should add, the recipe for "Freeze Ahead Caramel Sauce" in the link above sounds like it could be pretty yummy with those new crop apples that are showing up at the stores now.

    I'd use it to make a huge pan of mashed potatoes and then freeze some of the mashed potatoes for later use.

    ~I used to keep evaporated milk on hand to make hot fudge sauce(now I just rehydrate dried milk). This stuff is like the Hershey's Fudge sauce sold in jars in the ice cream aisle.

    Hot Fudge Sauce

    3/4 cup semi-sweet chocolate chips
    1/4 cup butter
    2/3 cup sugar
    5 ounces(2/3 cup) evaporated milk

    In a heavy saucepan, melt together chocolate and butter over low heat. Add sugar. Gradually stir in evaporated milk. Bring to boil over medium heat. Reduce heat and boil gently 8 minutes.

    You can use this warm on ice cream or as a chocolate fondue. Refrigerate leftovers.

    Wanted to add that you could also freeze the milk in ice cube trays and then transfer the cubes to a labeled bag.~

    thanks for the ideas! Yesterday I made the impossible pumpkin pie and some fettuccini alfredo, Loved the pie, wasn't impressed with the alfredo. Looks like I'll be cooking tomorrow and hope to freeze what I don't use.
