    Default Need some kitchen help...

Last night we made homemade eggrolls...we had 3/4 of a head of cabbage left over, so tonight i am making a Pork pot roast with potatoes, onions, carrots, and some cabbage. But while putting in cabbage tonight, i realied only some of it would fit. So, I am still left with a half o the head of cabbage... got any hints i could use the left over half head of cabbage for later this week?? I want to space this out some...i don't want three days straight of cabbage, lol. Phhewww. Man we are gonna be smelly after this week...

    Got any good coleslaw recipes?

What else could I do with this cabbage? I have chicken...hamberg..bacon..beef stew meat...that's about it for meats in the freezer right now... I have other veggies, like carrots, potatoes, onions, peas, tomatoe sauce, etc... I have rice, I have pastas, beans... (only restrictions here is we have allergies- mushrooms and seafood/shellfish/all fish) I have all kindsa seasonings, and I have parmesean and pepperjack cheese...eggs....

    Any ideas??

    TIA

I make an oriental coleslaw salad using shredded cabbage. I'll find the recipe and post it here.

    RAMEN NOODLE CABBAGE SALAD

    1 head cabbage, shredded
    8 green onions, sliced
1/2 c. toasted almond slices (optional)
1/2 pound salad shrimp or 1 chicken breast cooked and sliced small.
2 pkgs. Ramen noodles oriental, uncooked

Break up uncooked noodles and toss with remaining ingredients. Pour dressing over salad just before serving. Serves 10.
    DRESSING:

    1 c. oil
    2 tbsp. vinegar
    4 tbsp. sugar
    Ramen Noodle Seasoning Packet

    Mix together.

    Really yummy!!!!

My DH and DS love fried cabbage with bacon. They have this with any meat and potatoes.

Just slice up the cabbage very finely, chop up some bacon and onion.

Put the onion and bacon in a frying pan and cook until golden. Plop in the cabbage and cook on medium heat until the cabbage is brownish. This will take about 5 minutes. Add S & P if liked.

You're going to be very healthy after eating all this cabbage.

Melissa we make easy beerox with cabbage. I brown my hamburger meat, onion and cabbage all together with garlic salt and pepper to taste. Drain any grease off and serve it wrapped up in a flour tortilla and with a little mustard for a dipping sauce. It's a huge fav. around here but we love the much harder to make beerox so that's why we love this easy version.

    Default Pineapple Coleslaw

1 head cabbage, coarsely grated (about 5 cups)
1 small can crushed pineapple in heavy syrup, drained
    1 cup mayonnaise
    2 TBS cider vinegar
    1 TBS sugar

Drain all the syrup off the pineapple, pressing down to extract as much as possible (save for another use). Combine the pineapple with the mayonnaise, vinegar and sugar. Taste and adjust the seasoning - should be sweet & tart. Mix into the cabbage. Cover and refrigerate overnight. Drain off any liquid that has accumulated before serving.
