    Default Buffalo Chicken and Rice Salad

    Buffalo Chicken and Rice Salad Salad

    Makes 4 servings

    4 Skinless,boneless Chicken Breast halves
    2 Tbsp Olive Oil
    .75 Cup hot sauce, divided
    1 Box Success Classic Chicken Rice Mix
    1/2 Cup Celery, sliced
    1 Tbsp Butter or margarine
    6 Cup Mixed Salad Greens, torn-shredded
    1 Pkg 4oz Blue Cheese, crumbled

    Place chicken in a glass dish. Combine the olive oil and ½-cup hot sauce and pour over chicken; let stand 10-minutes.

    Meanwhile, prepare rice according to package directions; stir in seasoning packet.

    Move to a bowl and stir in remaining ¼-cup hot sauce.
    In a large non-stick skillet, sauté the celery in the butter until tender, 3 to 4 minutes.
    Add to the rice.

    Discard marinade from chicken and cook in same skillet until golden brown and cooked through, 4 to 5 minutes per side.

    Move to cutting board and cut into ½-inch thick slices.
    Add to the rice.
    Divide salad greens among 4 serving dishes.

    Spoon rice mixture on top and sprinkle with blue cheese.

    Rice Lasagna

    Makes 12 servings

    2 bags success White or Brown Rice
    vegetable cooking spray
    2 tbsp. reduced calorie margarine
    3/4 cup ground turkey
    1 cup chopped onion
    1 cup sliced fresh mushrooms
    1 clove garlic, minced
    2 cans(8 ounce, each)tomato sauce
    1 can(6 ounce) tomato paste
    1 tsp. dried oregano leaves, crushed
    1 carton(15 ounce)cottage cheese
    1/2 cup (2 ounce)grated Parmesan cheese
    2 cups (8 ounce) shredded part skim low-sodium mozzarella cheese
    1 tbsp. dried parsley flakes

    Cook rice according to package directions.
    Preheat oven to 350° F.
    Spray 13x9 inch baking dish with cooking spray; set aside.
    Melt margarine in large skillet over medium heat.
    Add ground turkey, onion, mushrooms and garlic; cook until turkey is no longer pink and vegetables are tender, stirring occasionally to separate turkey.
    Drain.
    Stir in tomato sauce, tomato paste and oregano; simmer 15 minutes, stirring occasionally.
    Layer half each of rice, turkey mixture, cottage cheese, Parmesan cheese and Mozzarella cheese in prepared baking dish; repeat layers.

    Sprinkle with parsley; cover.
    Bake 30 minutes.
    Uncover, continue baking 15 minutes.

    That salad sounds good especially with so many of my fav's in it. This would make a nice main dish salad in the summer with some crusty bread on the side. Thanks!
