Pineapple Oatmeal Cookies

Pineapple Oatmeal Cookies


20 oz. can crushed pineapple in syrup or juice
1-1/2 cups brown sugar
1 cup margarine
1 egg
3 cups rolled oats
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1 cup almonds, chopped and toasted
1 cup raisins

Drain pineapple well, reserving 1/2 cup syrup. Beat sugar and
margarine until light and fluffy. Beat in egg, pineapple and
reserved 1/2 cup syrup. Combine remaining ingredients, blend into
pineapple mixture. Drop by tablespoonfuls onto greased cookie
sheets. Shape with back of spoon. Bake at 350 for 20-25 minutes
until golden. Cool on wire racks.

I have got to try this recipe. I bet Gabe would love it. He's a big oatmeal cookie fan and we both love pineapple.
