1 (2-1/2 to 3 pound) broiler-fryer, cut in serving pieces

1/3 cup butter or regular margarine, melted

2 teaspoons salt

1/4 teaspoon pepper

2 cups corn flakes, crushed


Dip the chicken pieces in the melted butter; sprinkle with the salt and pepper, then roll in corn flakes.

Place the chicken skin side up and not touching, in a greased 15-1/2 x 10-1/2 x 1-inch jelly roll pan

Sprinkle with the remaining butter and corn flake crumbs.

Bake at 375-degrees for approximately 1 hour, or until done.

Do not turn during the cooking process.

Serves: 4.



Garlic Oven-Fried Chicken: Use 2-cups crushed potato chips, sprinkled with 1/4-teaspoon garlic salt, for the crushed corn flakes.
