    Smile What's cooking 3/10?

    This was supposed to be last nights dinner, but had a last min change.

    So tonight for sure~Brats on buns, German Potato Salad & green beans 

    What's on your menu?

    Frugal tonight with just me and DH at home. Tomato soup and grilled cheese tortillas (Quesadillas).

    Reuben casserole! Oh do you have the recipe??? We are having one of those frozen turkey brick things - it has been in the crock pot all day - rice, green beans and salad.

    I worked late... ran into SuperWalMart on the way home for some other things and wound up with chicken & mashed potatoes from their deli .... not very frugal, but, I was starved and already late....

    Beef fajitas, spicy rice (rice cooked with salsa and bits of bacon) and corn.

    Reuben Casserole

    1 (12oz) can corned beef
    1 (27oz) can sauerkraut, drained
    1/2 cup sour cream and 1/2 cup Thousand Island dressing mixed together
    3 cups grated Swiss cheese
    6 slices rye bread, cut in small pieces
    3/4 stick margerine, melted

    Mix the sauerkraut and sour cream mixture together. Place in baking dish. Crumble beef on top. Put swiss cheese on next. Put bread pieces on. Pour margerine on top.
    Bake about 30 minutes, 350 degrees.

    This turned out great! We had some vegies and chunky applesauce on the side.
