Stuffed Mushrooms
I'm afraid I don't have exact measurements for some of the ingredients in this recipe, but if you play around with the garlic powder, s & p quantities, it should work out to your liking.
Stuffed mushrooms
1 lb stuffing mushrooms
3 c. Ritz crackers, crushed
Garlic powder
S & P
Vegetable oil or olive oil
Crush crackers. I put these in a zip-loc bag and use a rolling pin or can to roll over them. Remove stems from mushrooms. Cut off the hard end (just a small slice to remove this tough part). Chop stems and add to crackers. Add approximately 1 tsp garlic powder, more to taste. Add just enough vegetable oil to hold
the mixture together. Add S & P to taste. This filling should have the consistency of moist stuffing (but not the texture, if that makes any sense) Stuff mushrooms. Place on cookie sheet lightly sprayed with non-stick cooking spray. Bake at 350º for 20-25 minutes. Yum!

I do my mushrooms the same, only I stuff with a mix of cooked Jones sausage, white bread and eggs, celery, chopped onions, same as my turkey stuffing.
