    Default "Tightwad" Baked Beans

    2 lbs of dried white beans(4 cups); 1 teaspoon baking soda; 1 medium onion; 1/2 lb salt pork or bacon; 1/4 cup brown sugar;2/3 cup molasses; 2 teaspoons dry mustard and 1/2 teaspoon salt(I omitted the salt); I also added 1 cup of catsup. Soak beans over night. drain and add fresh water and the baking soda and cook for 1 hour on top of the stove. Cut onion in 1/8 and place in bottoms of 2, 2qt covered baking dishes. divide drained beans between the 2 dishes. Add 1 pint of boiling water to the rest (except the meat) and pour over beans.(I made 2 small batches), Then divide the cut up raw meat on the top of the beans. Cover and bake for 6 hours at 300. Add boiling water as needed during cooking time. Freeze leftovers.
