Since hamburger is a staple in our home, thought I'd pass one of our favorites here.
1 lb or so of lean hamburger
1 small onion, chopped
1/2 bag of carrots, cut into small pieces
4 or 5 potatoes, peeled and cut into small pieces
1/2 bag of frozen green beans (or 1 large can, rinse and drained, I like the frozen better)
1 large can diced tomatoes, with juice
1 small can tomato sauce
spices (salt and pepper, for sure. I've also added a bit of onion soup mix, bout 1/2 envelope, makes it super!! or can add onion powder, garlic powder, etc. spice to suit taste)
In large pot add enough water to fill 1/2 pot. Add onions, carrots, potatoes, green beans, diced tomatoes and tomato sauce. Heat to boiling. When water boils, drop ithe hamburger meat in little balls into boiling mixture. Add in spices. Return to boil, reduce heat, cover and simmer for about an hour.
Goes great with cornbread, crackers, bread. Serves many. Better the next day as leftovers. Can use other leftover veggies, as well. Even my picky teen raves about this and eats more than one bowl. Guests love it. And it's cheap and easy. Enjoy.

That's how I make veggie soup all the time. My DH likes it best. He says it has more flavor. My mom made it that way years ago, cause it was cheaper than beef.
"hamburger stew" has become a staple in my house. I generally fix a big pot once a month, and we have leftovers for lunch and other dinners

Thanks for sharing. I make a similar recipe, but it's great to have variations. I use ground venison or turkey too.

I make something like this but add my campbells mushroom soup.

We used to have this when I was a kid. I don't know if my dh will like it. I think I will try it tonight and see what he thinks. Thanks for the reminder.
