    Default Panera's Cream Cheese Potato Soup

    Panera's Cream Cheese Potato Soup
    This is my favorite recipe for Potato Soup. It's a copy cat of the one they use to serve at the St. Louis Bread Company (Panera). SERVES 4 -6 (change servings and units)


    Ingredients
    4 cups chicken broth ( maybe more..I use about 6 as it dissipates during cooking process )
    4 cups peeled and cubed potatoes ( also added a few more potatoes )
    1/4 cup minced onion
    1/2 teaspoon seasoning salt
    1/4 teaspoon white pepper
    1/4 teaspoon ground red pepper

    1 (8 ounce) package cream cheese, cut into chunks

    Directions
    1 Combine broth, potatoes, onion, and spices.
    2 Boil on medium heat until potatoes are tender.
    3 Smash a few of the potatoes to release their starch for thickening.
    4 Reduce to low heat.
    5 Add cream cheese.
    6 Heat, stirring frequently


    Good by itself or with mild Italian Sausage or Ham also

    I have almost the same recipe. Panera Bread Creamy potato soup but mine called for crumbed bacon and it didn't have the minced onion.

    I was planning on making it this week.

    Absolutely, I forgot to include at the bottom to garnish with crumbled bacon, green onion and/or cheddar cheese. Which we do. This is to die for.

    I apologize for the forgotten part.
