We will be heading out for our Smoky Mountain vacation next month. I have a loose itenerary planned that includes 3 days of exploring and picnicing in the national park. We may also decide to picnic for lunch while driving (although dh may insist on fast food :rolleyes: ). I would like to have some frugal picnic lunches that aren't just lunchmeat- dh will balk at that idea for sure. So... what travels well and will be good cold?

what about chicken wraps (bring everything along to make them and make them when you stop), you could do the same with ham but if you are trying to stay away from lunch meat I was thinking you get chicken breast and slice into tenders fry/bake and wrap up til ready to use

You could make a hearty pasta salad, pita bread stuffed with lettuce, tomatoes, hummus, and cucumbers, or whatever veggies you like. Fresh fruit and cut up veggies with dip, chips and salsa. All that you could make ahead and just wrap up. You could bake up some dessert. :)
