meal planning, or, what can we make out of this
So, it's September, it's crazy time, we ate out 4x last week and the menu plan is shot. I need to use up leftovers and things that didn't get eaten last week.
I've got(fridge)
broccoli
tomatoes (lots)
peaches
zuchinni
corn (priority)
lettuce (priority)
beets
peppers
cucumber
cabbage
carrots
tortillas
limes
Freezer:
ham
chicken
meatballs
1/2 raw steak
turkey filets
cooked ground turkey 1/2 lb
bacon
1 crab claw
squash 1c
green beans 1/2c
cooked onions
pie crust
spring roll wrappers
pepperoni
cheese
egg rolls
puff pastry
tonight: corn on the cob, lettuce with tomato, cuc umber & beets, chopped ham?
tues: pasta & meatballs, broccoli
wed: chicken & onion quesadilla & zuchinni?
thur: chicken, green beans, carrot, puff pastry (pot pie)
Fri & Sat are eat-out days (social obligations)

If you're not using the stuff in your home, get rid of it. You're not going to start using it more by shoving it into a closet.

Limes and tomatoes can be used to make pico de gallo. Just add onion, jalepeno, cilantro, salt and pepper. Cut up the tortillas and bake to crisp to use as chips.
Cabbage and carrots are the base for egg rolls. You've already got the wrappers.

split the zucchini if they are small. . slice tomatoes, and place on the split zucchini, add grated Parmesan cheese, and broil til cheese melts and zucchini is tender. . . if the zucchini is larger, split and scoop out seeds, stuff cavity with diced tomatoes, diced polish sausage if you have/want - otherwise just the tomatoes and whatever cheese you have on hand. . . then broil until cheese melts and zucchini are tender. . .I like to add some garlic, and salt/pepper too.

roast the tomatoes with a bit of sugar (1/2 them and core some of them) pepper, garlic cloves and olive oil. then once cool, puree them and freeze. you can add to canned tomatoes to some of them and have a great sunday sauce for pasta!!!!

I would go for tortillas myself, you could use the lettuce and some of the tomaties with it. How it would go with the corn I don't know though, but maybe it would be good if you wouldn't put too much of them in it?
