Recipe Search: Low sugar apricot-pineapple jam
Does anyone have a good recipe for low sugar Apricot-Pineapple jam? We are using Pomona's Universal pectin and apricots we froze a couple of months ago. Thanks,

I use this website but haven't tried the jam recipes........so if you want a 'guaranteed good'........I don't know.

I did find a recipe in my Kerr book... Sorry but I haven't tried it.
Low Sugar Apricot Pineapple Jam
4-1/2 c. peeled and sliced apricots (approximately 2 pounds whole)
20-ounce can crushed pineapple, undrained
1 c. water
1-3/4 ounce packet Kerr Pure Fruit Pectin (Lite)
42 packets of aspartame artificial sweetener
In a 6-8 quart saucepan combine apricots, pinapple and water. Cover and simmer gently, stirring occasionally for 5 minutes or until apricots are soft. Remove cover and simmer an additional 2 minutes, stirring constantly. Remove from heat and add pectin; stir well. Let mixture stand for 10 minutes. Stir in artificial sweetener. Immediately fill hot half-pint jars with mixture, leaving 1/4 inch headspace. Wipe jar tops and threads clean. Place hot lids on jars and screw bands on firmly. Process in boiling water canner for 10 minutes.
Yield: 5 half-pints
