I try to keep browned ground meat in the freezer as well as some cooked chicken breast and ham. They aren't themselves meals, but I can make quick skillet meals with them by adding some rice or pasta and frozen veggies.

I keep portioned out meat. I buy the large packs and repack when I get home. I'll put 3 pork chops in a freezer bag for DH. I put 4 slices of bacon (pork for DH and turkey for me) into packs and freeze in a long container. I weigh out 1lb of ground meat for quick meals. I've learned that rice dishes freeze well without getting mushy...just finish off the rice dish and put into containers and pop into the freezer. A Japanese friend does this and I've learned from her. I've learned a LOT from her.
