    Default Brenda's 2015 Canning, Dehydrating & Preserving Journal.

    First I want to say please join in with me..I'm always interested in hearing and learning new things when it comes to preserving food.



    I pressure canned 15-pints (15lbs) of butter..never have done it before and glad I did [email protected]$1.89lb I just couldn't resist buying & preserving it for long term food storage. I always have fresh butter on hand but if I do run out I have my home canned..

    I dehydrated 35lbs of potato's..mostly did the shreds for hash browns and first time doing potato chunks..btw..they were 5-lb bags on sale for.99...best price I've ever seen!

    Disclaimer: Please don't say you shouldn't can butter because.. blah blah blah said's so...I would never put my family in jeopardy and I consider myself experienced..YOU do what is best for yourself and your family.

    No,I've seen butter canned before. And I think its awesome.
    Not in a place to can yet but I am working on it. Cant wait to see what people do.

    IMO~ I'm going to say many many years if stored properly..mine are vacuumed sealed in canning jars. I have some from 2-yrs ago that look & taste just like they did the day I dehydrated & stored them. I've not stored them for more then a few years because my son eats them.

    I looked at want to correct myself..I have jars that are 3yrs old.

    Adding 10-Qts and 1-1/2 pint of Tomato sauce w/meat..a total of 18 jars that equals 18-suppers that I don't have to make

    Awesome keep up the good work! I ahven't been able to do any canning due to sciatic issues, so I am jealous!

    Canned 7-quarts of Corned Beef (for the first time) hit the jackpot at Walmart where they had marked down the flat cut to $1.99 lb.. reg $3.98lb.

    I'm now up to 33 meals.

    It was late when the canner was finally done with its process so I just pulled the jars out of the canner and went to bed,,this morning I checked them and all the lids sealed & the jars look beautiful.

    I would like to join you Brenda,
    I am dehydrating some tomatoes and onions that we didn't use up from cooking out. I have my supplies for canning but haven't done that method before. I am waiting patiently for my garden to start producing. I have 3 4X4 square foot beds and several containers. I am going to make some of the meals for my son to take back to college with him. Hopefully I can get some ideas from seeing what all u do. I freeze my meat with my vacuum sealer

    I have not dehydrated onions or tomatoes yet..but thats in the near future.

    I can't or should I say not suppose to plant warm weather veggies until after our last frost date which is June 1st..I did plant kale,cabbage,lettuce,green beans only a few tomato plants and peppers.

    I also foodsaver lots of meat also..I love the variety.

    I will warn you once you start pressure canning it will grab a hold like addict to a drug..lol..its very addicting.
