Pizza Lover's Macaroni & Cheese
2 lbs elbow macaroni
1 lb Italian sausage
1 lb shredded sharp cheddar cheese, divided
1 lb shredded mozzarella, divided
1 lb velveeta cheese
1 lb pepperoni, shredded or thinly sliced
1 green or red bell pepper, chopped
3 scallions, chopped
1 lb fresh mushrooms, sliced
½ c pimento stuffed olives, sliced
3 cans evaporated milk
4 Tbsp grated parmesan cheese
1 16oz jar of spaghetti sauce
Cook macaroni in large pot of boiling water according to package directions. Drain. Remove casings from sausage.
In a skillet over medium heat, cook sausage, crumble and drain.
Preheat oven to 375°.
Slice velveeta cheese and place in microwaveable dish. Cover and microwave for 1 minute at a time, stirring occasionally, until melted. Measure ½ c each of cheddar and mozzarella and set aside.
In a large bowl, combine remaining cheddar and mozzarella with melted velveeta and all the macaroni, sausage, pepperoni, peppers, scallions, mushrooms, olives and evaporated milk.
Mix thoroughly and divide into 3 large (13x9) baking pans.
Bake for 45 minutes, or until bubbly.
Sprinkle tops with reserved cheddar and mozzarella cheese and parmesan cheese.
Heat spaghetti sauce and spoon over tops of hot casseroles.
* You can leave out what you don’t like or substitute for example we don’t eat olives so I just leave them out. Some like to use ½ pepperoni and ½ genoa salami or ½ hot sausage and ½ sweet sausage. Be creative!
Freeze for 3 months.
