Vegetarian Baked Stuffed Shells
Vegetarian Baked Stuffed Shells
Recipe DescriptionI took my mom's recipe for vegetarian lasagna and adapted to stuffed shells since I didn't have lasagna noodles. It came out great!Preparation Steps:Shred all the carrots, zucchini, and the mozzarella cheese. Cook the pasta shells until al dente. Drain all the veggies as much as possible.Level of Difficulty:EasyTime Needed:prep 20 minutes, cook 30 minutesIngredients:-1 box jumbo pasta shellsServes:
-1 c shredded carrots
-1 c chopped cooked spinach
-2 c shredded zucchini
-1 16oz tub of small curd cottage cheese
-1/4 c parmesan cheese, shredded or grated
-1 egg
-4 to 6oz shredded mozzarella
-salt, pepper, garlic powder and italian seasoning to taste (I don't really measure these!)
-1 jar of your favorite pasta sauce
-7 or 8 big leaves of fresh basil, chopped (optional)ccserves 6-8Directions:In a bowl, mix the carrots, zucchini, spinach, basil if you're using it, parmesan cheese, cottage cheese, egg, and spices. Stir until really mixed together. In a 9x13 baking dish pour enough pasta sauce just to lightly cover the bottom. Fill the shells (not too full!) with the veggie mixture and place seam side down in the baking dish. Repeat until they're all filled. You may have some extra pasta. Pour the remaining pasta over the top and spread out evenly. Bake at 400 degrees until nice and bubbly. Top with mozzarella and baked until melted. Eat and enjoy!

I've never made stuffed shells before -- do you cook the pasta shells first? TIA for help!

Not op but yes you do cook them first.
