    Springtime Spaghetti

    Recipe Description
    This recipe was originally from my dd's boyfriends Mom but I've tweaked it a bit and changed the directions to time everything better. You can also make this with cooked chicken instead of the shrimp but the pink of the shrimp along with the colors of the veggies really reminds me of springtime.Or a mix of the 2. May need to add a bit more milk if it is too thick
    Preparation Steps:Level of Difficulty:Time Needed:Ingredients:
    2 med squash, 1 yellow & 1 green, cut into thin 2"matchsticks
    2 med carrots, cut into thin 2"matchsticks
    2 cloves garlic, crushed

    3/4 lb cooked shrimp, small or a bit bigger

    2tsp. flour
    1/2c. milk
    2/3c. grated parmesan
    1tsp salt

    4T margarine,divided
    1T olive oil

    8oz spaghetti
    In skillet, cook veggies & garlic in the olive oil & 1tsp. of the margarine until tender. Remove from pan & set aside.

    Get your pasta cooking and while it is add remaining margarine to skillet, melt. Stir in flour, cook for a min. & slowly add milk; stirring constantly. Cook until slightly thickened. Add veggies, shrimp, cheese & salt, cooking to heat it all through. Drain pasta, toss all together & serve.

    Darlene this sounds so good. I have shrimp squash I may try this.

    I just happened to be thinking what to do differently with the squash I picked. I think I will give this a go it look absolutely delicious! Thank you for sharing this.
