    Default Blueberry Pie

    Blueberry Pie

    Recipe Description
    Delicious way to use up blueberries. Recipe is from:

    http://www.pickyourown.org/blueberrypie.php

    There are directions there for making a regular pie vs. one with a graham cracker crust too. The tutorial for this recipe is excellent, and the site is worth visiting for lists of places where you can pick your own fruits & vegetables in your area as well as canning directions & recipes too.
    Preparation Steps:
    Preheat oven to 375º

    Rinse blueberries and pick out stems.
    Level of Difficulty:
    Easy
    Time Needed:
    1 hr baking time plus about 10 min prep time
    Ingredients:
    ~3-4 cups of Blueberries fresh or frozen
    ~7 T. corn starch
    ~3 T. water (or grape juice)
    ~2 T. lemon juice
    ~9 inch graham cracker pie crust
    ~1 tsp cinnamon
    ~1/4 tsp allspice
    ~2/3 c. sugar

    * Crumb topping:
    ~1/4 cup sugar
    ~1/2 cup flour
    ~1/4 cup butter or margarine
    Serves:
    8
    Directions:
    1. Combine the 2/3 c. sugar , 7 Tablespoons of cornstarch, and spices in a bowl and mix well.
    2. Add the 2 T. of lemon juice, and 3 T. of water (or grape juice) and stir it up.
    3. Add the blueberries to the pie crust. Just pour them in. It will cook down, so don't worry if they mound up about an inch above the edge of the plate.
    4. Pour the mixture of sugar, juice, etc. into the pie all over the blueberries.

    5. Mix topping in a small bowl and sprinkle it over the pie:

    * 1/4 cup sugar
    * 1/2 cup flour
    * 1/4 butter or margarine

    6. Bake pie for 1 hr until golden & bubbling.

    Thanks for this wonderful recipe and the site, Michelle! I just picked a Ton of Michigan blueberries a few weeks ago at my neighbors house. I freeze them so that we have them year round. This will be the recipe I make for our August potluck/fishfry.
