Potato Casserole with Lays chips
My son and I the last couple weeks have been going through my grandmother's cook books. Both my departed grandma and the one still living (bless her she's turning 97 this summer!) and we found this little gem that has to be my all time favorite potato recipe. Grandma lists it, and we've always called it, simply the Potato Casserole. To find the numerous variations of this online look up "Mormon Funeral Potatoes". Not sure how it got that name, no one in the Mormon community i grew up in took these for funerals.
2 lbs frozen hashbrowns (Thawed)
1/2 cup butter
2 cans cream of chicken soup
8 oz sour cream
1/2 tsp salt
1 medium onion (chopped)
1 Tbsp butter
16 oz (2 cups) mild cheddar cheese (grated)
Lays Orginial potato chips (crushed)
Preheat oven to 350 F
In a medium sauce pan, saute the onions in the 1 Tbsp butter until translucent.
Mix all ingredients except the potato chips in a large bowl.
Spray a cake pan (or 9x13 baking dish) with non-stick spray, the spread the mixture evenly in the pan.
Top with the crushed tater chips.
Bake for about 45 minutes, until heated through and starting to bubble.
When grandma would make this she would put an even layer of crushed chips on the top so you couldn't see the tater mixture under it.
