    Baked Cheesy Stuffed Chicken Breast


    Recipe Description
    This is a new recipe I came up with for chicken breasts and it is really good.
    Preparation Steps:
    Preheat oven to 400 degrees.
    Line a baking pan with non stick aluminum foil.
    Pour 1/4 cup canola oil into lined baking pan.
    You will need a large bowl for the Panko and a small bowl for the egg/milk wash.
    Level of Difficulty:
    Medium
    Time Needed:Ingredients:
    6 chicken breasts, flattened and tenderized
    4 ounces Colby cheese cut into 6 cubes
    4 ounces Velveeta cheese cut into 6 cubes
    Panko bread seasoning
    1 egg
    1/2 cup milk
    Serves:Directions:
    Prepare chicken breasts buy pounding and flattening them to tenderize.
    Pour Panko seasoning into large bowl.
    Mix 1 egg and 1/2 cup milk in small bowl.
    Cut cheeses into cubes. Place 1 cube of Colby and 1 cube of Velveeta into each chicken breast and roll and tuck.
    Dip stuffed chicken into egg/milk bath and then roll in Panko. Dip back into egg/milk bath and back into the Panko. *be sure and hold together making sure stuffing doesn't come out. You can hold with a toothpick but I found it holds together just fine once placed in the baking pan
    Place chicken into baking pan with seam of chicken on top.
    Repeat steps for each breast.
    Bake approximately 1 hour until juices of chicken run clear and Panko is slightly browned.

    This sounds utterly delicious - I hesitated reading this thread for awhile since I love cheese too much!! Finally succumbed to temptation and will definitely be making these - mahalo!!

    Yes Panko is seasoned Japanese bread crumbs. I got mine at Walmart.
