Pumpkin Fluff

2 cups skim milk
1 package sugar-free vanilla or butterscotch pudding mix (we prefer butterscotch)
1 cup Pumpkin
1 tsp pumpkin pie spice (or more)
4 oz fat free whipped topping

1 Make pudding. Stir in pumpkin and spices.
2 Either fold in the Cool Whip or layer it as a parfait.

The healthier version--which is also quite good -- uses 2 cups plain ff yogurt, 1 box sf butterscotch pudding, 1/2 can pumpkin, Splenda and pumpkin pie spice to taste.

eta: I prefer making it with butterscotch vs. vanilla too.

Just an I make this with canned pumpkin vs. fresh (not that you can't do fresh too--this has just been my experience.

This really is an all time favorite. My husband likes when I put it in a graham cracker crust. He swears it is the best diet food he has ever eaten.

I also forgot to mention that I've made this with low fat soy milk and low fat rice milk (due to lactose intolerance), and it's still just as tasty
