    Default Pumpkin Chili

    Pumpkin Chili


    Recipe Description
    A good 'stick to your ribs' welcome to the autumn season. It makes more than my small family can eat, but I've been able to freeze it without problems.
    Preparation Steps:Level of Difficulty:
    easy
    Time Needed:
    1-2 hours
    Ingredients:
    3 pounds "meat"
    2 cups solid pack pumpkin
    2 cans red kidney beans
    2 medium onions, chopped
    45 oz. chopped tomatoes
    2 tablespoons chili powder (or to your tastes)
    1/4 teaspoon red pepper flakes (to taste)
    2 tablespoons sugar
    1 teaspoon salt
    Serves:
    a family (or two)
    Directions:
    Brown the 'meat', drain. Add the rest of the ingredients.
    Simmer on low for 1-2 hours (stir often)

    I'm assuming 'meat' means some kind of ground meat?

    If so, I just may make this over the weekend ~ I have everything I need!!

    I usually just say 'meat' in my recipes because it could be made with ground beef, chicken, turkey, vegetarian alternative... etc
