    Thumbs up Pumpkin Cake

    This is my sil recipe and is delicious! I took this to Mom's for Easter.

    Pumpkin Cake

    ½ cup shortening

    1 cup cooked pumpkin

    3/4 cup milk

    2 eggs

    2 cups all purpose flour

    3 teasp. baking powder

    1 teaspl baking soda

    ½ teasp. salt

    ½ teasp. cinnamon

    ½ teasp. ground ginger

    ½ teasp. nutmeg

    1½ cups granulated sugar

     

    Preheat oven to 350º.

    Sift all dry ingredients together and set aside.

    In a large bowl cream shortening and sugar together, add the pumpkin and milk mix well. Add the eggs one at a time mixing after each addition. Gradually add the dry ingredients.

    Bake in a greased and floured pan. You can use 2 loaf pans (bread size) a 13x9 pan, muffin tins or even a bundt pan.

    2 loaf pans 50-55 minutes

    13x9 pan 30-35 minutes

    bundt pan 55-65 minutes

    Muffin tin 20-25 minutes.

    I have never made this into muffins but I know it works. This is a good sized recipe so it should make at least 20-24 muffins.

    My sil always made a 10X sugar and milk glaze for it, but I love it with whipped cream.

    Pumpkin is one of my favorite flavors, thanks for the recipe, I am putting it into my recipe files. I can't wait to try it. Thanks for sharing it with us.

    Thank you for bumping this recipe. I guess I can substitute canned pumpkin for the fresh?? I have a few cans in the pantry to use, and pumpkins aren't quite ready for picking yet.

    Absolutely Debbie, that is what I use.

    Also if you only have spiced pumpkin in a can, just leave out the spices and it comes out great too.
