Diabetic Pumpkin Pie
<DIV>1 c. pumpkin</DIV>
<DIV>1 egg</DIV>
<DIV>2 egg whites</DIV>
<DIV>1/2 c. biscuit mix</DIV>
<DIV>1/8 tsp. salt</DIV>
<DIV>2 tsp. pie spice</DIV>
<DIV>2 tsp. vanilla</DIV>
<DIV>3 tsp. Sweet and Low</DIV>
<DIV>1 can skim evaporated milk</DIV>
<DIV> </DIV>
<DIV>Put all ingredients in a blender and mix well. </DIV>
<DIV>Spray a 9-inch pie pan with Pam. </DIV>
<DIV>Bake at 350 degrees until set, about 35-45 minutes. </DIV>
<DIV>Makes it's own crust.</DIV>
