Marshmallow Pumpkin Pie
Marshmallow Pumpkin Pie
2 cups Pumpkin Puree -- approximately
2 cups minature marshmallows -or- 3 cups regular ones
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teasponn nutmeg
1/4 teaspoon ground cloves OR - 1 tablespoon pumpkin pie spice
1/2 pint plus 1 cup COLD whipping cream (non dairy -- sort of) topping will do
1 9" cookie crumb pie crust
In a medium pan, warm pumpkin and marshmallows on low heat until creamy (use a wire whip to stir)Do Not Boil. Stir-in the spices and cool the mixture.
Whip-up the cream in a chilled bowl.
GENTLY fold-in the cold whipped cream into the cooled pumpkin. GENTLY pour into pie crust and chill one hour

we do a similar thing with sweet potatos .. except instead of cooking the marshmallows in, we bake them on top for the "crust" .. sooooo good! a holiday staple in our house
