I use this Pumpkin Nut Bread recipe for bread & muffins. It makes 1 loaf or about 18-24 muffins:
Pumpkin nut bread
2 C flour
2 t baking powder
1/2 t baking soda
1 t salt
1 t cinnamon
1 C solid pack pumpkin (I use 2 c fresh pumpkin puree)
1/2 C milk
2 eggs
1 t nutmeg
1/4 C butter/margarine, softened
1 C sugar
1/2 C walnuts or pecans
Sift together flour, baking powder, baking soda, nuts, salt & spices. Combine pumpkin, sugar, milk, & eggs in bowl. Add dry ingredients & softened butter. Mix until well-blended. Stir in nuts. Spread into well greased loaf pan.
Bake at 350* 45-55 mins until toothpick inserted in center comes out clean.
yields 1 loaf.

That sounds really good. I'll definitely try that out this fall/winter.
