    Fancy Pants Salad


    Recipe Description
    This is one of our families favorite salads and was first served to us a wedding reception where I asked the head waiter for the recipe. We were all dressed up & the salad sure was something, hense the salads name.
    Ingredient amounts are eyeballed lol.
    Preparation Steps:Level of Difficulty:Time Needed:Ingredients:
    Spring greens
    1 apple, chopped
    toasted walnuts
    dried cranberries
    croutons
    blue cheese, crumbled

    Raspberry vinegrette
    Serves:Directions:
    Toss salad ingredients with a little raspberry vinegrette. Enjoy!

    I have always wondered what was in that salad when you would post it in dinner menus. It sounds divine, I am going to have to make it soon. Thanks for sharing it with us.

    Question

    I know blue cheese is a one of a kind taste, but is there anything that comes close that I could substitute? I am lactose intolerant, but I do have a cheese "source" (Cabot brand and some varieties of Kraft) where I could get some that have 0 g lactose. I have never seen blue cheese in those brands, though.

    I'd substitute something crumbly, maybe you can find a "feta"?
