Garden Party Pasta SaladGarden Party Pasta Salad
Recipe DescriptionTomatoes, Basil, and Mozzarella can make any day feel like a summer holiday!Preparation Steps:
You can also add diced pepperoni, a hit with the kids.Boil the pasta until al dente.Level of Difficulty:Time Needed:Prep time: 10 minutes Cook time: about 10 minutesIngredients:8 oz. of your children’s favorite pastaServes:
4 large ripe tomatoes, diced
4 ounces mozzarella cheese, diced
4 tablespoons olive oil
½ cup fresh chopped basil
1 clove garlic (optional)
¼ cup kalamata olives (optional) I used black olives
pine nuts (optional)
salt and pepper to taste
Water for boiling pastaMakes 6 servingsDirections:In a large bowl, combine the tomatoes, basil, garlic, mozzarella cheese, kalamata olives, and olive oil.
Drain the pasta and add to the tomato mixture.
Toss gently, and garnish with fresh basil leaves and pine nuts.

a little chopped pepperoni creates a whole different flavor... the kids liked it.
