    Broccoli Salad with a Crunch


    Recipe Description
    Nice salad that goes well with just about any meat.
    Preparation Steps:
    Cut broccoli into florets and cube trimmed stems
    Mix dressing & set aside
    Level of Difficulty:
    Easy
    Time Needed:Ingredients:
    1 1/2 to 2lbs broccoli
    1/3c. dried cranberries
    1/4c. red onion, chopped
    3/4c pecans, chopped & toasted(can be held aside with bacon to add at serving time if desired)
    10 slices bacon, cooked

    Dressing:

    1c. mayo
    2T splenda (may use more & use real sugar)
    3T apple cider vinegar
    Serves:Directions:
    Cook broccoli in salted boiling water 1 min, drain & plunge into ice water, drain well & place in large bowl.
    Add rest of salad ingredients (except bacon) and toss with enough dressing to coat. Reserve rest of dressing and add when serving. Chill well. Add bacon at serving time so it stays crunchy.
    S&P if needed or wanted.
