Broccoli Salad with a CrunchBroccoli Salad with a Crunch
Recipe DescriptionNice salad that goes well with just about any meat.Preparation Steps:Cut broccoli into florets and cube trimmed stemsLevel of Difficulty:
Mix dressing & set asideEasyTime Needed:Ingredients:1 1/2 to 2lbs broccoliServes:Directions:
1/3c. dried cranberries
1/4c. red onion, chopped
3/4c pecans, chopped & toasted(can be held aside with bacon to add at serving time if desired)
10 slices bacon, cooked
2T splenda (may use more & use real sugar)
3T apple cider vinegarCook broccoli in salted boiling water 1 min, drain & plunge into ice water, drain well & place in large bowl.
Add rest of salad ingredients (except bacon) and toss with enough dressing to coat. Reserve rest of dressing and add when serving. Chill well. Add bacon at serving time so it stays crunchy.
S&P if needed or wanted.
