Cream of Mushroom Soup
Recipe DescriptionI don't usually eat cream of mushroom soup by itself. Sometimes I use the canned stuff for recipes (but that's rare because Dave doesn't like mushrooms). I made this today so I could use it in place of the cream of mushroom soup in a crockpot recipe. I wish I had more mushrooms because I'd make more. It's *that* good.Preparation Steps:Level of Difficulty:EasyTime Needed:~30 min cook time, and 5-10 min prep timeIngredients:• 8 oz. thinly sliced mushroomsServes:
• 2 c. boiling water
• 3 chicken bouillon cubes or equivalent base or granules
• 2 T. finely chopped onion
• 1/4 cup butter
• 3 T. flour
• 3 c. milk
• salt and pepper to taste5-6 cupsDirections:Preparation:
In a large saucepan, combine mushrooms, boiling water, chicken bouillon, and onion. Bring to a boil; cover and simmer for 20 minutes. Melt butter in another saucepan; blend in flour. Gradually add milk; cook, stirring constantly, until thickened. Add sauce to mushrooms and season to taste with salt and pepper.
*Notes: I made this with a combination of rice milk & soy milk because I am lactose intolerant. I also used onion powder vs. onion because I ran out of onions yesterday.

Ya know, I can't say that I ever even thought about making this from scratch. I love the idea. I grew up having Campbell's. It was always one of my faves, because as kids, me and my BF would have it on cold snowy days. My mom always had that or Tomato. So many memories

Michelle, I wanted to tell you that I made it and me and my hubby just loved it. The kids don't like mushrooms, but that just left more for us

this helps telling me you used Rice milk also since my 13 yr old is using this now instead of normal milk.
I know I used rice milk to make boxed pudding did not turn out as normally, granual , but not bad, he ate it.
so learning to cook with rice and soon almond milk for him.

Is your son lactose intolerant? I haven't made this recipe in a while, and since then I've discovered Smart Balance lactose free milk. Dave says it tastes just like regular milk, and if he drinks it/uses it in his cereal, it HAS to be good (he's pretty picky LOL)
Anyway, I am going to try it again with that milk, and I'm also going to send the recipe to my mom because she & my father like mushrooms too.

I'd like to make this and have my parents over for lunch to try it. No one here will eat it
