Southwestern Soup

Recipe Description

Preparation Steps:

Drain and rinse kidney beans

Level of Difficulty:

very easy

Time Needed:

20-30 minutes

Ingredients:

3 cups water
4 cans (8 oz. each) tomato sauce
3 cans (16 oz. each) kidney beans, rinsed and drained
2 cans (14.5 oz each) chicken broth
2 cups frozen corn
2 cups salsa
2 t dried minced onion
2 t dried oregano
2 t dried oregano

shredded cheddar for topping

Serves:

12 servings, 1 1/3 c each

Directions:

In large pot, combine all ingredients expect the shredded cheese and bring to a boil.

Reduce heat;simmer;uncovered, for 10-15 minutes or until heated through.

Sprinkle individual servings with shredded cheese.
Optional: Serve with tortila chips.

I used onion powder and garlic powder, not dried minced onion. Also added a bit of black pepper.

Added in 1 can of green beans, drained at hubby's request.

Didn't have any salsa, so substituted with a red chilie taco sauce.

Very yummy/
