Corn Cheese Soup
Corn Cheese Soup
Recipe DescriptionEasy, quick usually cheap cheesy corn chowder recipe. Uses 6 ingredients! The recipe is set up to make 2 adult servings.Preparation Steps:Make sure you have enough ingredients: 1 can of creamed corn is required for an adult serving.Level of Difficulty:
Note: there is NO salt added to this recipe as both the cheddar cheese AND the creamed corn are usually salty! I did NOT forget it, it was omitted deliberately.EasyTime Needed:20-30 minutesIngredients:1/2 onion, choppedServes:
2 (15 ounce) cans creamed corn
1/4C milk (optional)
1/2C cheddar cheese, chunked
2T olive oil
1/4t pepperapprox 2CDirections:Put the oil in a saucepan big enough to hold all of the ingredients. Heat the oil on medium, till hot, but not smoking. Add the onion. Turn down the heat to low and sauté the onion until translucent and soft. Add the creamed corn.
If you didn't get all of the corn out of the cans, put the milk in one can and use a spoon to swirl it around to get as much of the corn as possible, pour into the second can and repeat. Then, add the corn/milk mixture to the corn.
Heat the corn until it starts to steam and bubble. Turn off the heat. Stir in the pepper and 1/2 of the chunked cheese. Stir until the cheese is all (or partly) melted.
Have ready two bowls. Divide the remaining cheese chunks between the bowls. Pour a serving of soup in each bowl over the cheese. Enjoy!
(I have added mushroom, chopped chilis, etc. use your imagination to this, but this is the basic recipe.)

I've never heard of this before, but I will be adding it to my meal plan. I am a fan of creamed corn...hopefully the rest of the family will like it in this recipe. They don't like it when I add it to shepherd's pie

Had some left over corn and scallions that I used to make this. It was very nice. Definately going to be a standard!
