Stuffed Cabbage Soup
Stuffed Cabbage Soup
Recipe DescriptionThe easiest soup I've ever made. DH swears it tastesPreparation Steps:
just like his Mother's cabbage balls/rolls, except it's a
soup!Not much;Level of Difficulty:
1) slice cabbage
2) make a pot of rice in a big pot. How much rice
really depends on you and your dietary restrictions.EasyTime Needed:All dayIngredients:1 lb. of groundServes:
turkey, pork or beef.
1 large can of
tomato paste
1 head of cabbage,
sliced.
salt/pepper
rice
waterMakes a massive pot of soupDirections:1) In a BIG crockpot break up the raw ground meat
so it does not cook in one big clump.
2) Put in tomato paste by the spoonful
3) put cabbage on top.
4) fill crock with water
5) season just with salt
6) Cook on low all day, then adjust seasonings
adding pepper and more salt if needed.
7) Pour crock of soup over cooked rice in big pot, or
serve over rice in bowls.

Absolutely, but I'd keep the rice out. I plan on doing just that with garden harvest. I'll be using garden tomatoes instead of tomato paste. I just will not be putting the rice in until I'm ready to thaw and reheat. Now the rice may freeze just fine in the soup, but I think my family will prefer the texture of the soup better if I add the rice at the end.
The thing about this soup is just how good it is as leftovers. Something about the rice and the tomato marrying that really makes it great.

We call it it Russian soup and we add onion to it to taste.

I made this today and all I can say is OMG it was delicious. I did add about 1/2 of a vadalia onion I needed to use. I used 1/2 lb beef and 1/2 lb sausage.
I was able to freeze app. 4 containers for later use plus some in the fridge for now.
It was easy peasy to make.

Two servings leftover Stuffed Cabbage Soup= free
Two leftover baked potatoes diced & added = free
1/2 loaf leftover crusty italian bread = free
One good friend for lunch = priceless
It tasted so yummy... I was forced to give out the recipe. lol
