    Celery soup


    Recipe Description
    Reader's Digest Curried Celery Soup
    Preparation Steps:
    na
    Level of Difficulty:
    Easy
    Time Needed:
    24 minutes
    Ingredients:
    3T butter or
    margarine
    4 stalks celery,
    finely chopped
    3T all purpose flour
    1 1/2t curry powder
    3/4t salt
    1/4t black pepper
    2C milk
    4C water or chicken
    broth
    Serves:
    6
    Directions:
    Melt the butter in a 3 qt sucepan over moderate
    heat. Add the celery cook uncovered for 5 mins,
    until tender-crisp. (Stir occasionally.)

    Remove pan from heat, blend in dry ingredients to
    make a paste.** Gradually stir in liquids.

    Return to heat and stir constantly until it comes to
    a boil, Reduce heat, cover, simmer 10 mins.

    RD's notes: Recipe can be halved or leftovers
    refrigerated for up to 3 days. Garnish*** for each
    serving: 1T shredded sweetened coconut, chopped
    pecans or chopped raisins with 1t choped chives.
    For a richer soup, use half and half instead of milk.

    ** I have marked this spot as a place I can stop
    and leave the recipe until I'm ready to continue.
    When I have to do this, I usuallly prepare the soup
    to this point in the morning before work, and then
    finish the recipe after work.

    ***I have NEVER used any of these garnishes, so I
    cannot tell you if they are good or not.

    Yay!! Thank you for posting this - I have coconut on hand too! Can't wait to try this out and VERY soon with my sad celery.
