Bean & Bacon Chowder
Recipe DescriptionA thick, hearty soup great on cold days. Modified from The Total Tightwad Gazette.Preparation Steps:Level of Difficulty:EasyTime Needed:30 minsIngredients:1 lg can baked beans (I use maple brown sugar flavor)Serves:
1lb bacon, chopped
1 large onion, chopped
2T flour
4 C milk
1T thyme
3 medium potatoes, peeled & diced
1t salt1 cupDirections:Cook bacon & onion in saucepan until bacon is lightly browned and onion is tender. Blend in flour. Add milk, cook & stir until bubbly. Add potatoes, thyme, 1 tsp salt, & 1/8 tsp pepper. Cover & simmer 12-15mins or until potatoes are done. Stir in beans & heat through.

That sounds really good. I wasn't expecting it to have baked beans in it though. I'm thinking I'll be putting that on the menu soon.
