Ham and Bean SoupHam and Bean Soup
Recipe DescriptionQuick ham and bean soup.Preparation Steps:I have made this with both regular ham and turkey ham - I actually like the turkey ham better.Level of Difficulty:
Be sure to use the LOW SODIUM chicken broth. Otherwise, it will be too salty.EasyTime Needed:30 minutesIngredients:2 tablespoons cooking oilServes:Directions:
1/2 cup chopped onion
1 chopped carrot
1 cup chopped or diced ham
4 can Great Northern beans
1 can low-sodium chicken broth
1/2 to1 teaspoon dried red pepper flakesHeat oil in stock pot or dutch oven.
Saute onion and carrot for about 5 minutes.
Add ham and cook additional 5 minutes.
Add one can of Great Northern beans and mash with potato masher. (This thickens the soup)
Add remaining 3 cans of beans, chicken broth, and pepper flakes.
Cook until heated through.

I'll give this a try. I think I have some dried great northern beans that I could cook and use.
