Thirty Minute Chicken & Veggie Soup

Recipe Description

Chicken vegetable soup from scratch, well sort of!

Preparation Steps:

Wash and mince the vegetables, Mince the carrots, onion, and celery. If you have kale, celery leaves, or carrot tops (I use organic carrots for this only) mince them as well

30 minutes

Ingredients:

1 quart chicken stock
3 carrots,
2 lg stalks celery
1/2 onion
1/2 boneless chicken breast (or equivalent cooked meat, about 1/2C)
1t Better Than Bullion, chicken(or try a bullion cube?)
Approx 1/4C mixed greens: carrot tops, kale, and/or celery leaves.

Serves:

4 bowls

Directions:

In a saucepan big enough for the quart of stock, put approx 1/4" broth and add the minced veggies. Simmer.

While this is simmering, put the chicken on a plate and cook on high in the micro, approx 4 mins. then turn it over and again cook it on high for 4 mins. There should be browned juices on the plate, but nothing black. Using a hot mitt, remove the plate and chicken from the micro, mince the chicken and add to the simmering veggies.

When the plate cools a bit, use a basting brush or pastry brush and a little of the remaining broth to remove the brown bits from the plate and add to the pot. Add the remaining chicken broth. Heat till steaming. Add Better than Bullion and stir until dissolved.

One thing that got changed in the various edits: the 4 minutes per side is what my microwave needs to cook the chicken breast. Do what works in your microwave, you want the chicken cooked throughly.
