I clipped this out of the local newspaper food section a few months back. It has a caribbean flair and is great.

2 teaspoons canola oil
1 cup onion, chopped
1 1/2 teaspoons garlic, minced
1 pound boneless skinless chicken breasts, cut into bite size pieces
1 teaspoon curry powder
2 teaspoons Caribbean jerk seasoning
1/2 teaspoon cracked black peppercorns
1/4 cup dry red wine
2 tablespoons capers, drained ( I omitted this)
1 16 oz can reduced sodium black beans, drained
1 14.5 oz can Italian style diced tomatoes, undrained

Heat oil in large skillet over medium high heat. Add onion and garlic, cook for 5 mins or until tender.
In a medium bowl, combine chicken, curry, jerk seasoning and pepper. Add chicken mixture to pan, cook 4 mins. Stir in wine, capers, beans, and tomatoes. cover and reduce heat to low. Simmer 10 mins or until tender.

I added aobut 2 cups of cooked brown rice and 2/3 cups water.

Good with crusty bread!
